The Health Crystal is used in combination with the "Ender Health"-gene. For an explanation read the page about the "Ender Health"-gene. It can also be placed as an block. The player who placed is is the only one who can break it with a right-click. Then Heal Crystal shrinks when it gets damage. It only heals you in a range of 20 blocks.
